Linda fromEating Well, Living Thin, has a recipe for avocado deviled eggs that is so smart.After hardboiling, she basically takes the egg yolks and mashes them up with avocado (which is loaded with healthy nutrients!), spices and a squeeze of lemon.(Note: She uses a teensy bit of mayo, but if you're not a fan (like moi), just sub in some plain yogurt).
Such a smart idea that I can't wait to try!(She says they're a hit at parties, so even better.)
