Oh my goodness--I have died and gone to heaven.I recently tasted a date and pecan roll and nearly fell out of my chair.They are that good!And,with only two ingredients and zero added sugar,this is a healthy holiday snack worth making!
Where have date rolls been all my life?I picked up a pack at Whole Foods recently and,OMG,they were so incredibly good.What's a date roll,you ask?It's a very simple concoction of mashed dates (pits removed,obviously) that are rolled in finely chopped pecan bits (or your fave nut--or even coconut flakes).
You can buy them this time of the year at many markets,but beware of the types that are made with shortening,butter or other icky additives that you don't need.The dates are moist and flavorful enough.
And,you can totally make these at home (I'm going to this weekend!).Simply throw in a bunch of pitted dates into the blender or food processor.Then,when they reach a smooth consistency scoop out and roll into balls on a plate of chopped pecans.You could what would also be good blended in with the dates?Cinnamon!
